Homemade Crunchy Keto Cereal – A Favorite Low Carb Cereal


This recipe I published here for the first time back in 2011-ish. I had been on the lookout for a good homemade crunchy keto cereal or at least a low carb cereal. This was before any keto products even existed out there, like Catalina Crunch or High Key (my two personal favorites), not to mention, keto pop tarts!

But before the days when you could find keto cereal easily online, I made it a lot. I always had it in the house, and sometimes I mixed it up, and sometimes I left it simple. Over time I made ever so slight adjustments until I got to the recipe you see below, and when you haven’t had sugar in a while, I swear it tastes like frosted flakes.

Lately I’ve been making it a lot more, because it’s easy and inexpensive. This keto coconut cereal is also great for snacks too. You can toast the coconut flakes, then add to a bag of nuts for a good hiking snack, which I do too.

If you have unsweetened coconut or almond milk, I think you’ll really enjoy this recipe for keto coconut cereal. It’s my stand-by and one of my most tried and true recipes, plus it’s really easy.

Homemade Crunchy Keto Cereal

Prep Time: 2 minutes| Cooking Time: 5 minutes| Total Time: 7 minutes

Ingredients:

  1. Preheat oven to 325 degrees, and cover a baking sheet with parchment paper.
  2. Spread coconut flakes on a baking sheet, then toss with cinnamon, vanilla extract and stevia glycerite, and rearrange back into a single layer.keto cereal
  3. Bake for 5-10 minutes watching closely. As soon as they begin to brown, remove quickly. They will continue to cook a little and brown once they are out of the oven.keto cereal
  4. Once they cool and get crispy, store in an air-tight container with a paper towel to absorb any extra oil and moisture.

Note: Like me, you might be thinking you need to add a little coconut oil to this mix, but it’s not really necessary. The cinnamon sticks just fine because of the extract and stevia glycerite, and extra oil can cause the cereal to cook longer and burn even after you’ve removed it from the oven.
